Almond & Parmesan Crusted Halibut

Ingredients

1/2 cup Longo’s Ground Almonds

1/2 cup grated Parmesan cheese

2 tbsp finely chopped parsley

1 tbsp finely grated lemon zest

1/2 tsp Longo’s Paprika

1 boned, skinless halibut or cod fillet (about 2 lb total), cut into 6 pieces

1/2 tsp each salt and pepper

2 tbsp Longo’s Mayonnaise

1 tbsp Longo’s Dijon Mustard

Lemon wedges

Directions

  • Toss ground almonds with Parmesan, parsley, lemon zest and paprika in shallow bowl until well combined.
  • Season fish with salt and pepper. Blend mayonnaise with mustard and brush over top of halibut fillets; dip each fillet into crumbs, patting so that they adhere. Arrange fish on large baking sheet lined with Longo’s Essentials Parchment Paper.
  • Roast in preheated 400°F oven for 14 to 16 minutes or until fish flakes when tested with a knife. Transfer to platter and serve with lemon wedges.
