Avocado Chicken Salad

Ingredients

2 tbsp Longo’s Extra Virgin Olive Oil

4 Longo’s Chicken Cordon Bleu Breasts

1 tub (142g) Longo’s Baby Arugula

2 avocados, sliced

1 container (200g) Longo’s Grape Tomatoes

1/2 cup salad dressing of your choice (approx.)

Directions

  • Heat 2 tbsp Longo’s Extra Virgin Olive Oil in large non-stick ovenproof skillet. Brown chicken on both sides. Place pan in preheated 400°F oven for about 15 minutes or until no longer pink inside and thermometer registers 165°F. Set aside for
  • 3 minutes before slicing.
  • Meanwhile, divide arugula, avocados and tomatoes among 4 dinner plates. Top with chicken and drizzle with dressing
  • to serve.
