Beef-Filled Zucchini Boats

Ingredients

4 zucchini (about 1kg total)

1 onion, finely chopped

1 pkg (454g) Longo’s Certified Angus Extra Lean Ground Beef

1 cup Longo’s Medium Salsa

2 cups mozzarella-cheddar shredded cheese blend, divided

Directions

  • Cut zucchini in half lengthwise and scoop out inside cavity, leaving about a 1/2-inch edge. Chop scooped out zucchini; sprinkle inside of zucchini halves with 1/2 tsp each salt and pepper.
  • Place zucchini halves onto baking sheet lined with Longo’s Essentials Parchment Paper, trimming bottom of zucchini if necessary to stay up. Roast in preheated 400°F oven for 10 minutes and set aside.
  • Meanwhile, heat 2 tbsp Longo’s 100% Pure Canola Oil in large skillet over medium-high heat and add chopped zucchini and onion. Cook, stirring, for about 5 minutes or until starting to brown. Add ground beef and 1/4 tsp each salt and pepper. Cook, breaking up beef, for about 3 minutes or until no longer pink. Stir in salsa to combine; remove from heat. Stir in 1 cup of the cheese.
  • Fill each zucchini half with beef mixture and sprinkle with remaining cheese. Return to oven for about 15 minutes or until zucchini is tender and cheese is melted and golden.
