Cheddar Polenta with Sausage and Greens

Ingredients
1 pkg (500g) Longo’s Mild or Hot Raised Without Antibiotics Pork Sausages, casings removed
1 tub (283g) Longo’s Baby Kale or Cooking Greens
2 cloves garlic, minced
1 cup cornmeal
1 cup shredded Longo’s Spiced Colby Cheese
Directions
- •Heat 1 tbsp Longo’s 100% Pure Canola Oil in large skillet over medium heat. Add sausages and cook, stirring and breaking up sausage meat, for about 5 minutes or until browned well. Stir in kale, garlic and 1/4 tsp each salt and pepper. Cook, stirring, for about 5 minutes or until greens are wilted and tender. Keep warm.
- •Meanwhile bring 4 cups of water and 2 tsp of salt to a boil. Whisk in cornmeal until starting to thicken. Switch to a wooden spoon and stir polenta for about 10 minutes or until very thick. Stir in cheese until melted.
- •Spoon polenta into shallow bowls and top with sausage mixture. Sprinkle with more cheese, if desired.
A dash of advice
Vegetarian Variation: Substitute veggie sausages or veggie ground round for the pork sausages.
