Chili & Coffee Rubbed Rib Roast

Serves 6 to 8

Ingredients

1 Longo’s CAB Prime Rib Roast, cap removed and tied (2 ribs or 2kg to 2.5kg)

2 tbsp Longo’s Extra Virgin Olive Oil

2 1/2 cups sodium-reduced beef broth, divided (approx.)

2 tbsp cornstarch

1/3 cup 35% whipping cream

Rub

4 tsp instant coffee

1 tbsp Longo’s Essentials Chili Powder

1 tsp each Longo’s Essentials Mustard Powder, Onion Powder and Salt

1 tsp Longo’s Essentials Garlic Powder and Ground Black Pepper

Directions

    Rub
  • Blend coffee with chili powder, mustard powder, onion powder, salt, garlic powder and pepper until well combined.
  • Place roast on large cutting board. Rub oil over entire roast then coat all over with Rub. Place roast on a rack set in small roasting pan. Let stand at room temperature for 1 hour. (Make-ahead - Roast can be refrigerated, uncovered, overnight; remove 1 1/2 hours before roasting.)
  • Pour up to 2 cups of broth into pan (or enough to cover the bottom of the pan but without touching the meat). Place roast in preheated 450°F oven for 20 minutes. Reduce heat to 325°F; roast for 1 1/2 to 2 1/4 hours or until internal temperature reaches 145°F for medium- rare (or continue to cook until preferred doneness).
  • Remove roast to clean cutting board; rest, tented with Longo’s Essentials Foil, for 20 minutes before untying from bones and slicing thinly across grain.
  • Meanwhile, remove rack and pour pan liquids into gravy strainer or large heatproof measure. Strain off all but a few spoonfuls of fat. Add remaining 1/2 cup broth and enough water to measure 2 cups.
  • Return liquids to pan and set over burner set to medium. Whisk cornstarch with 1/4 cup cold water and stir into pan; bring to a simmer. Stir in cream and simmer for 5 minutes or until thick. Adjust seasonings to taste.
  • Serve sliced roast with gravy.

A dash of advice

Tips: If instant coffee has large granules, for better coverage, crush with a mortar and pestle, a spice grinder, or on a cutting board with the back of a large wooden spoon. If feeding a larger crowd or if you just want lots of leftovers, double roast (4 ribs), adjusting roasting time as needed (estimate 25 minutes per extra pound).
