Chunky Monkey Bites

Ingredients
1 cup Longo’s Pitted Dates
1 ripe banana
1 tsp vanilla
1 cup Longo’s Rolled Oats
2 tbsp Longo’s Flax Seeds
2 tbsp Longo’s Chia Seeds
1/4 cup Longo’s Walnuts, coarsely chopped
1/4 cup mini chocolate chips
3/4 cup Longo’s Shredded Coconut, toasted
Directions
- •Pulse dates to break apart in bowl of food processor. Add banana, vanilla, oats, flax and chia seeds and pulse until a thick paste-like mixture is formed. Stir in walnuts and chocolate chips.
- •Using heaping tablespoonfuls, roll mixture into balls and roll each ball in coconut until well coated; place on parchment-paper-lined baking sheet. Cover and chill for at least 1 hour.
- •Bites can be kept in the refrigerator for up to 7 days.
