Crispy Bacon Avocado Toast

Ingredients

8 slices Greenfield Natural Meat Co® Bacon

2 medium to large ripe avocados, pitted

1/2 Lime, juiced

4 thick slices of sturdy style bread such as grain bread or sour dough

1 heaping tbsp Longo’s organic curly parsley, minced

4 tsp Longo’s Extra Virgin Olive Oil

1 large clove garlic, peeled and cut lengthwise

Sea salt & Fresh ground pepper

Directions

  • Cook bacon per package instructions. Slice bread on the bias and lightly toast. Using a spoon, scoop flesh from avocados into a large bowl. Roughly mash with the back of a fork. Stir in lime juice and parsley. Season with salt and pepper to taste. Drizzle olive oil over each piece of toasted bread. Gently rub garlic clove over the bread, discard after rubbing. Divide avocado mixture and spread onto base of each slice of bread. Top with crispy bacon. Serve immediately.
