Crispy Fish and Bacon Salad

Ingredients
1 pkg (400g) Longo's Lemon Pepper Breaded Sole Tenders
8 slices bacon
3/4 cup Longo’s Balsamic Dressing
1 bag (397g) coleslaw
4 cups Longo’s Baby Spinach
Directions
- •Place sole tenders on baking sheet lined with Longo’s Essentials Parchment Paper and bake in preheated 425°F oven for 14 to 16 minutes, turning once halfway through, or until crisp and golden.
- •Meanwhile, cook bacon in large skillet over medium-high heat for about 8 minutes, turning occasionally, until crispy. Remove bacon to plate lined with paper towel. Measure 1/4 cup of the bacon drippings and place in large bowl. Whisk in balsamic dressing and 1/2 tsp each salt and pepper.
- •Toss coleslaw with spinach and bacon dressing. Chop cooked bacon and toss to combine. Divide salad among plates and top with fish to serve.
