Crown Roast Pork With Mint Salsa Verde

Ingredients

1 tbsp each Longo’s Paprika and Longo’s Garlic Powder

2 tsp each salt and Longo’s Dried Oregano

1 tsp pepper

1 crown roast pork (11 to 13 ribs, about 8 to 9lb)

2 tbsp Longo’s Extra Virgin Olive Oil

SALSA VERDE

1 1/2 cups fresh mint

1 1/2 cups fresh parsley

1 large shallot

3 tbsp Longo’s Curato Red Wine Vinegar

1 tbsp Longo’s Capers

3 cloves garlic

1/2 tsp each salt and pepper

1/2 cup Longo’s Extra Virgin Olive Oil

Directions

  • Stir together paprika, garlic powder, salt, oregano and pepper until well combined. Rub spice mixture all over the meaty portions of crown pork. Place pork on rack in roasting pan. Brush with oil. Tent roast with foil.
  • Roast pork in preheated 325°F oven for about 3 hours; uncover and continue to roast for 30 to 60 minutes more or until the internal temperature registers 155°F. Tent with foil; rest for 20 minutes before slicing between ribs to carve.
  • SALSA VERDE
  • Meanwhile, combine mint, parsley, shallot, vinegar, capers, garlic, salt and pepper in food processor; pulse until uniformly chopped. With the motor running, slowly pour in oil until well combined but still a bit chunky. Serve pork with salsa verde on the side.

A dash of advice

Salsa verde will keep in the refrigerator for up to 3 days and has a multitude of uses. Throw a spoonful into cooked rice, toss with roasted potatoes, serve over tacos, fish or as a sandwich spread. It also makes a tasty dip for crudité when blended into sour cream. Because a crown is a big roast, you can cut the recipe in half and use a rack of pork (5 to 6 bones or 3 1/2 to 4lb) instead. Or ask your Longo’s Meat Expert for a Mini Crown Roast, which has less meat and will easily serve 6. Adjust roasting time down to 1 1/2 to 2 hours. If freezing leftover pork, take the time to trim the pork from the bones and cube into bite-sized cubes before freezing in 1- to 2-cup portions. That way, bags can be pulled out and thawed quickly to add a tasty protein boost to stews or chili, one-dish rice or pasta recipes, or main course salads.
