Curry Yogurt Lamb Kabobs

Serves Makes 6 skewers

Ingredients

1/2 cup plain low-fat Greek yogurt

2 tbsp Longo’s Extra Virgin Olive Oil

1 tbsp Longo’s Honey

2 tsp mild curry powder

2 cloves garlic, minced

1/4 tsp each salt and pepper

1 lb Ontario boneless lamb leg, cut into 1 1/2-inch cubes

1 large red pepper, cubed

1/2 red onion, cubed

Sauce

1/2 cup plain low-fat Greek yogurt

2 tbsp chopped Longo’s Fresh Mint

1 tbsp Longo’s Extra Virgin Olive Oil

1 clove garlic

Pinch each salt and pepper

Directions

  • Blend yogurt with oil, honey, curry powder, garlic, salt and pepper. Add lamb cubes and coat in marinade. Marinate for at least 2 hours or overnight.
  • Preheat grill to medium. Thread lamb onto 6 soaked wooden skewers, alternating with red pepper and red onion. Grill, turning often, for 8 to 10 minutes or until lamb has a hint of pink in the centre.
  • Sauce
  • Meanwhile, blend yogurt with mint, oil, garlic, salt and pepper. Serve with kabobs.
  • Steak Variation
  • Substitute cubed sirloin steak for the lamb.
