Eggplant Pita Sandwiches

Serves 4

Ingredients

1/4 cup of Longo’s Extra Virgin Olive Oil

1 eggplant (about 1 lb), sliced crosswise into 1/2-inch-thick slices

4 Longo’s Pita Pockets

1/2 cup Longo’s Tzatziki

1 cup sliced Longo’s Flame Roasted Peppers

or sliced cucumbers

1/2 cup crumbled feta cheese

Directions

  • Place sliced eggplant in colander and sprinkle with 1 tsp salt. Let stand for 30 minutes. Rinse with water and pat dry.
  • Lay eggplant slices on baking sheet lined with Longo’s Essentials Parchment Paper. Using 1/4 cup of Longo’s Extra Virgin Olive Oil, brush slices evenly on both sides. Sprinkle with a pinch of pepper. Place under broiler for about 5 minutes or until golden brown. Turn and broil other side for about 5 minutes or until golden and tender.
  • Slice pitas in half and spread inside with tzatziki. Divide eggplant and peppers among pitas and sprinkle with feta.
