Grilled Barbecue Cauliflower Steaks

Ingredients

1 cauliflower, leaves removed

2 tbsp Longo’s Barbecue Spice Rub

2 red peppers, quartered

1/2 cup Longo’s Original Barbecue Sauce

1 container (400g) Longo’s Cooked Vegetable Fried Rice or California Quinoa Salad (350g)

Directions

  • Slice cauliflower into 4 pieces through the stems to look like “steaks.” Drizzle 2 tbsp Longo’s 100% Pure Canola Oil all over each slice. Sprinkle both sides with spice rub.
  • Toss peppers with 1 tbsp Longo’s 100% Pure Canola Oil. Place cauliflower steaks and peppers on preheated medium grill for about 10 minutes, turning once, until tender and grill marked. Brush cauliflower steaks with barbecue sauce while grilling.
  • Heat rice in microwave. Chop grilled peppers and stir into rice along with 1/4 tsp each salt and pepper.
  • Divide rice among 4 plates and top each with a cauliflower steak to serve.

A dash of advice

For easy barbecuing, line the grill with heavy duty barbecue foil so cauliflower doesn’t fall down the grates of the grill. Simply brush with barbecue sauce at the end.
