Lemon Gelato Mousse with Honey Roasted Pecans

Serves 4
Ingredients
1 cup 35% whipping cream
2 tbsp granulated sugar
1 container (510mL) Longo’s Curato Lemon Gelato
1/2 tsp grated lemon zest (optional)
1/4 cup Longo’s Organic Fruit Spread (blueberry or strawberry)
1/2 cup Longo’s Honey Roasted Pecans, crushed
4 Longo’s Maraschino Cherries or 1 tsp grated lemon zest (optional)
Directions
- •Using an electric mixer, whip cream with sugar in large bowl until stiff peaks form.
- •Scrape gelato into cream with lemon zest, if using; beat with electric mixture until just combined.
- •Spoon half the mousse into 4 dessert or parfait cups. Spoon half the fruit spread overtop. Sprinkle with half the pecans. Repeat layers once. Top each parfait with a cherry or lemon zest, if using.
- •Enjoy immediately or freeze until ready to serve.
A dash of advice
If freezing parfaits, let stand at room temperature for about 10 minutes before enjoying.
