Mexi-Cali Breakfast Sandwich

Ingredients

4 Greenfield Sausage Breakfast Rounds

2 English muffins or seeded breakfast bagel, lightly toasted

6 slices avocado

2 heaping tbsp Pico De Gallo or salsa, prepared

2 eggs, fried sunny side up

2 slices Monterrey Jack Cheese

Directions

  • Prepare breakfast sausage per package directions. Assemble sandwich by arranging sliced cheese and 3 slices of avocado onto base of bread. Place two sausage rounds over top slightly over lapping followed by 1 tbsp of Pico De Gallo and fried egg. Top with remaining bread. Repeat with remaining ingredients. Serve immediately.
