Olive-Crusted Cod

Ingredients
1 cup Longo’s Seasoned Bread Crumbs
3 tbsp finely chopped pitted Longo’s Kalamata Olives
2 tbsp chopped fresh parsley
1lb cod fillets (about 4 or 1 large cut into 4 pieces)
1 container (400g) Longo’s Kitchen Rice, heated
Directions
- •Combine bread crumbs, olives, parsley, 1/4 tsp pepper and a pinch of salt in shallow dish.
- •Sprinkle cod fillets with 1/2 tsp salt and brush with 2 tbsp Longo’s Extra Virgin Olive Oil. Coat fillets well in bread crumb mixture on both sides and place on baking sheet lined with Longo’s Parchment Paper.
- •Roast in preheated 425°F oven for about 12 minutes or until light golden and fish flakes when tested. Serve cod with rice.
A dash of advice
Stir in a few chopped olives and 1 tbsp parsley to add to the rice dish, if desired.
