Plank-Grilled Hasselback Grilling Cheese with Roasted Red Pepper Topper

Ingredients

2 red bell peppers

1 sweet onion, halved through root end

1 tbsp Longo’s Signature Sicilian Extra Virgin Olive Oil

2 pieces grilling cheese (about 200g each), such as halloumi or Guernsey Girl

1 TrueFire Cedar Grilling Plank (soaked for at least 1 hr)

2 tbsp chopped fresh Longo’s Basil

1 tbsp Longo’s Pine Nuts

2 cloves garlic, minced

2 tsp chopped fresh dill, mint, parsley or oregano

1 tsp Longo's Curato Crushed Hot Chili Spread (optional)

Salt and pepper

2 tbsp Longo’s Red Pepper Jelly, heated

1 Longo's Baguette (for Grilled Baguette Slices, see below) or 1 pkg Longo’s Crostini Longo’s Curato Balsamic Glaze

Directions

  • Drizzle peppers and onion on preheated high heat grill for about 10 minutes, turning often, until peppers are blistered all over and onion is tender. Place in large bowl; cover with plastic wrap and let stand for 10 minutes. Peel and seed peppers and pat dry. Slice into about 10 strips each; set aside. Dice onion and place in bowl.
  • Place 1 piece of grilling cheese on cutting board between the handles of 2 wooden spoons. Cut down at 1/4-inch intervals along the length of the cheese. Repeat with other piece of grilling cheese. Slide slices of roasted red pepper between each slice of the cheeses.
  • Pat grilling plank dry on one side and top with grilling cheeses spaced evenly. Dice any remaining strips of pepper and add to onion bowl. Stir in basil, pine nuts, garlic, dill and chili spread, then season to taste with salt and pepper. Stir in pepper jelly to coat. Spoon mixture overtop of each cheese.
  • Place plank on preheated medium grill; close lid and grill for about 15 minutes or until cheese is soft and hot to the touch.
  • Serve immediately with baguette slices and drizzle with balsamic glaze to serve.
  • Grilled Baguette Slices
  • Slice a Longo's Baguette and brush with Longo’s Extra Virgin Olive Oil. Grill over medium heat until toasted. Let cool slightly before enjoying.
