Shrimp "Poke" Rice Bowl

Ingredients
2 cups Longo’s Shelled Edamame
1 bag (454g) Longo’s Extra Jumbo (16/20) Black Tiger Cooked Shrimp, thawed
1/2 cup Longo’s Teriyaki Cooking Sauce
1 pkg (450g) Longo’s Meal Kit Cooked Rice Vermicelli Noodles
1 large avocado, pitted and sliced
Directions
- •Cook edamame in pot of boiling salted water for 3 minutes. Drain well and rinse with cold water. Set aside.
- •Stir together shrimp and teriyaki sauce.
- •Toss rice noodles with 1 tbsp Longo’s 100% Pure Canola Oil and 1/4 tsp each salt and pepper. Divide among bowls. Top each bowl with avocado, edamame and shrimp. Serve with more sauce, if desired.
A dash of advice
Look for other sizes of cooked Longo’s Black Tiger Shrimp for this recipe. You can remove the shrimp tails before tossing with the sauce, if desired.
