Simple Sausage & Egg Breakfast Sandwich

Ingredients

4 Greenfield Natural Meat Co® Frozen Breakfast Sausage Rounds

2 eggs

2 English Muffins, split and lightly toasted

2 slices good quality old cheddar

2 tbsp Longo’s Extra Virgin Olive Oil

1/4 cup Longo’s organic baby arugula or peashoots

Sea salt

Ground pepper

Directions

  • Cook sausages per package directions, remove onto paper towel lined plate and keep warm. Cook eggs one at a time. Whisk egg in a small bowl. Heat 1 tbsp of oil in a small skillet over medium heat. Cook egg 1 to 2 minutes while running a spatula constantly around the perimeter in a forward center motion until the shape of a circle the size of the English muffin forms. Flip egg and cook 30 to 45 seconds longer. Remove onto a plate and keep warm, repeat with remaining oil and egg. Assemble sandwich by dividing arugula onto base of muffin followed by egg, cheese and sausage. Top with remaining slice of English muffin. Serve immediately.
