Spiced Poached Pears with Ice Wine and Cranberries

Ingredients

4 ripe pears, peeled, cored and cut in half lengthwise

2 oranges

2 Longo’s Cinnamon Sticks

2 star anise

1 vanilla bean, halved

1 tbsp grated fresh ginger

1 cup ice wine or late harvest wine or apple juice

1/2 cup Longo’s Signature Maple Syrup Pinch pepper

8 sprigs fresh Longo’s Thyme

3 tsp Longo’s Unsalted Butter

1/2 cup fresh or frozen cranberries Ice cream (optional)

Directions

  • Cut bottom end of each pear half 3/4 of the way through so pear can fan open as it cooks. Place in roasting pan.
  • Cut oranges in half and juice to get 1/2 cup; place in large bowl. Cut oranges into 2-inch chunks; add to juice. Stir in cinnamon, star anise, vanilla bean, ginger, ice wine and maple syrup. Pour over pears. Sprinkle pears with pepper and top with thyme sprigs. Dollop butter on top of pears. Cover and bake in preheated 400°F oven for 40 minutes. Uncover and sprinkle in cranberries; bake for 20 minutes or until pears are tender when pierced.
  • Remove from oven and let cool for 10 minutes before serving. Spoon cooking liquid over pears and serve with a scoop of ice cream, if desired.
